1. POSITION GRIDDLE
Place the griddle across two of the stove burners, typically front to back.
Note: If you have a commercial range, your model may come with a built-in griddle. If so, move on to the next step.

2. PREHEAT GRIDDLE
Preheat the griddle to the desired temperature for your recipe. While some griddles come with a built-in thermometer, you can also use the tried-and-true water droplet method. When a droplet of water sizzles as it hits the surface, your griddle is ready for food.
To ensure that your food cooks properly, it is essential to let your griddle preheat fully. Adding your ingredients before it is hot enough can result in food that cooks too slowly and sticks to the surface of the griddle. If searing meat, let it preheat a bit longer with higher heat than when cooking more delicate foods like pancakes or eggs.

3. PLACE INGREDIENTS ON GRIDDLE
Place the food on the griddle and cook. With tongs or a spatula, gently turn the ingredients per the recipe. For griddles with a nonstick coating, wooden or silicone utensils are recommended.

4. REMOVE FOOD
After the food is finished cooking, remove the ingredients from the griddle and transfer them to a plate.
